Usage Instructions:

  1. Prepare Ingredients:

    • 1kg mutton cutlets
    • Oil for frying
    • 3 medium onions diced
    • 500ml mutton stock
    • 4 garlic cloves crushed
    • 2 teaspoons crushed ginger
    • 1 teaspoon grated lemon rind
    • 6 curry leaves
    • 2 eggplants cubed into 1cm blocks
    • 1 green pepper seeded and diced
    • 1-2 green chillies seeded and chopped
    • 1 cup raisins
    • 2-3 tomatoes skinned and grated
    • 1 tablespoon tomato paste
    • 1 cup meat stock cube
    • 1½ cups Basmati or long grain rice
  2. Cooking Method:

    • Heat the oil in a large pot, sauté onions and spices from (pouch 1 - seeds), stirring frequently until onions are translucent to golden brown.
    • Add garlic, ginger, curry leaves, green pepper, lemon rind and chillies with contents of (pouch 2) and stir-fry until spices become fragrant.
    • Reduce heat slightly and add the meat and spices from (pouch 3). Cook until meat is sealed. Take care not to burn the spices.
    • Add stock, tomato paste, potatoes, eggplant, tomatoes and simmer for 10 minutes, stirring frequently.
    • Slowly add contents of (pouch 4) bit by bit, tasting frequently until desired taste (strength) is obtained. Stir in the raisins, reduce heat and simmer for 1½ - 2 hours, stirring occasionally.
    • Prepare rice with contents of (pouch 5) according to instructions on rice pack.
    • Garnish with crispy salad, sliced banana and chutney or a dollop of Greek yogurt mixed with finely chopped dhania leaves and a squirt of lemon.

Storage Instructions:

  • Store in a cool, dry place away from direct sunlight.
  • Use within 6 months of opening.
